
Shrubs are fruit, herb and spice-infused drinking vinegars that can add a dose of flavor to plain sparkling water or cocktails and may aid your digestion. Sweetened with honey instead of the more traditional sugar, this sweet-tart spiced apple shrub mocktail tastes like a refreshing sip of autumn in a glass.

Spiced Apple Shrub Mocktail
Ingredients
- 1 lb (454g) Fuji or Honeycrisp apples (about 2 large apples)
- 3/4 cup (180g) apple cider vinegar
- 2 tbsp fresh ginger, chopped
- 1 orange
- 1 cup water
- 2/3 cup (213g) honey
- 3 cinnamon sticks
- 2 cloves
Directions
Thinly slice the apples and discard the cores. Place the apples in a large nonreactive bowl. Add the apple cider vinegar and chopped ginger. Using a vegetable peeler, remove long strips of zest from the orange, avoiding the white pith, and add the zest to the bowl. Reserve the orange for another use. Lightly crush the ingredients together using a cocktail muddler or potato masher.
In a small saucepan, combine 1 cup (237ml) water, the honey, cinnamon sticks, and cloves. Bring to a boil, stirring occasionally. Pour the hot mixture over the apple mixture and let cool to room temperature. Cover tightly and refrigerate for 2–3 days.
Strain out the solids and pour the liquid into a 24-oz. glass bottle or Mason jar. Store in the refrigerator indefinitely.
To make a nonalcoholic spritzer, fill an 8-oz. (237ml) glass with ice and plain carbonated water. Add 2 tbsp shrub and stir to combine. Makes about 2 1/4 cups shrub.
