Farro has a nutty flavor, a slightly crunchy bite and works perfectly with juicy oranges and blueberries. Blueberry Orange Farro Breakfast Bowl
Ingredients
- 1/2 cup (100g) uncooked pearled farro
- 1/2 cup (122g) fat-free Greek Yogurt
- 1 large orange, zested, peeled and sectioned
- 2 tsp honey
- 2 cups (50g) baby spinach, coarsely chopped
- 1 cup (150g) fresh blueberries
Directions
Cook farro according to package instructions until tender, about 30 minutes. Drain and let cool.
In a medium bowl, stir together the yogurt, orange zest, and honey. If desired, cut the orange sections into bite-sized pieces.
Combine the farro and the yogurt mixture and stir well to mix. Add the orange sections, spinach, and blueberries and stir to combine.
To serve, spoon into two separate bowls and enjoy immediately or store in the fridge for 3 to 5 days.
